The air at the Oneida County Fair was filled with the usual sights and sounds – the whirring of carnival rides, the cheerful chatter of families, and the irresistible aroma of fair food. While I was up on stage performing with my band, I noticed a gentleman in a red shirt rocking to our music. His shirt mentioned BBQ, so I asked him about it. He told us he enjoyed our performance and invited us to come by afterward, promising to take care of us! I never turn down a savory promise like that! The smell drew me in like a tractor beam. That’s when I discovered BS BBQ, a food truck from Oconto, Wisconsin, and my culinary curiosity was piqued.
I had the pleasure of meeting the owner, a man whose passion for his craft was as evident as the delicious aroma wafting from his smoker. He was an absolute gentleman—gracious and welcoming—taking the time to chat even amidst the bustling fair crowd. His friendly demeanor made the experience even more enjoyable, proving that good food often reflects the good people who make it.
And the food? Oh, the food! I ordered the brisket, gouda mac and cheese, and jazzy green beans—a trio that promised comfort and flavor. The brisket was incredible—tender, juicy, and packed with a smoky flavor that could only come from hours of slow cooking. It practically melted in my mouth, and the owner even offered me some choice pulls from the smoker.
But the sides were far from an afterthought. The gouda mac and cheese was a creamy, cheesy dream with a rich, smoky flavor that perfectly complemented the brisket. I don’t know why more people don’t use Gouda! And the jazzy green beans? They were a vibrant, flavorful surprise, a delightful counterpoint to the richness of the mac and cheese and brisket.
I walked away from the BS BBQ food truck with a full belly and a happy heart. The food was nothing short of amazing—a true standout in a sea of fair food options. It’s a real gem that you absolutely need to track down.
